Baked Apples with Cinnamon Granola


Love the sweet cinnamon flavors of apple pie but don’t want to take the time to craft a whole pie? Baked apples are a great substitute, especially with the seasoned granola filling! These are a personal-sized delightful apple treat!

Ingredients

For the apples
6 medium apples (we prefer honeycrisp)
1 tablespoon softened butter
1 tablespoon brown sugar
1/4 teaspoon cinnamon

For the granola
6 tablespoons unsalted butter
1/2 cup all-purpose flour
1/2 cup chopped pecans
3/4 cup old-fashioned oats
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon kosher salt

Instructions

Preheat oven to 375°. Coat baking dish with non-stick spray. Core the apples, scooping out the core, seeds, and stem. Blend together the butter, brown sugar and cinnamon and spread into the cored apples.
Melt the butter over medium heat. Remove melted butter from heat then stir in remaining granola ingredients. Divide granola between the apples, filling each apple (it is okay if it overflows apples a little).
Cover with foil and bake 20-25 minutes. Remove foil and bake another 20-30 minutes until topping is browned and apples are soft. Serve warm (or with ice cream) and enjoy!
